- Did I came up with this all by myself?
I've experimented and created the metod of spawning in custom mobs by myself as the plugin "Denizen" which I use for it allow a person to create their own plugins. I have to mention that denizen can become quite complicated, more then terraincontrol is. In a matter of fact terraincontrol can be completely rewritten and extended with denizen.
- Can you copy vanilla creatures AI?
Yes you can, Actually I've always based new custom mobs on the existing mobs AI but altered them to my likings.
All I want to spawn at the moment is a blue sheep for my blue biome
For me this would be easy as I'm more experienced with denizen scripting then someone new to denizen would be, I could even script this for you if you'd like.
However, if I was making a mob that did breathe fire, grow five
heads when you anger it, and turn into a yellow bouncy ball when you
kill it, lets say, I would do all that in the custom AI script, correct?
Hahaha, Denizen has it's limit as it's not a mod However, with a certain mod pack it would be possibile. All denizen can do is grab whatever is available and alter these settings, for example Sheep colors are available so pinkpurpleblueish sheeps can be done without a doubt, however a pink dragon would not be possibile as enderdragons dont support colors. ( Unless you have a texturepack with pink dragons stuffs in it, then denizen could assign that pink ish dragon color to whatever dragon )
As shown by MCPitman there's also the option using Minecraft Worlds, I dont have any experience with the plugin/mod but I can without any doubts say that it will be easier to start experimenting with however on the other hand denizen allowes more customisation. Let me know what you'll decide

I could also script blue particles around the sheep, or make a charged creeper which looks blue
